Quick Miso Salad

Let’s be honest, you’re here for the dressing. So put whatever you want in the salad and make this dressing today. Like, now. Double batch it, or tripple.

Ingredients:
Dressing:
1″ Fresh Ginger, grated
1 Garlic clove, grated
3T Olive Oil
3T Lime Juice
2T Agave Nectar
1 1/2 T White Miso Paste
1/4 t Salt

Salad:
Kale, chopped
Cherry or Grape Tomatoes, halved
Bell Pepper, diced
Carrot, diced
1 15oz can Chick Peas, drained and rinsed
Sliced Almonds

Directions:
In a large mixing bowl, mix dressing ingredients and whisk to combine. Add Kale, Tomatoes, Bell Pepper, Carrots, and Chick Peas. Toss to combine. Right before serving, toss in Arugula. Sprinkle with Sliced Almonds.
